First Course : Escalibada

Escalibada is a dish we were introduced to while visiting our friends in Barcelona. It’s so simple yet so good–just grilled vegetables in olive oil.

For our version, we coated eggplant, bell pepper, yellow squash, onion and garlic with a generous amount of olive oil, and roasted in the oven at 400 degrees for 45 minutes. That’s it.
